Whoopie Pies
I love Spring, but unfortunately, in Scotland, the weather is still pretty unpredictable.
While I’d love to be outside for the whole weekend, sometimes the wind and the rain
have other ideas.
On days like that, I like to stay at home, and bake delicious things, while watching the
outside world (it’s still beautiful, even in the rain).
Whoopie pies are about to become everybody’s favourite treat, and they’re very easy
to make. I made mine today with red velvet cake batter, but you can use anything. I’m
really looking forward to trying out a pumpkin cake version next.
Ingredient List:
Your favorite cake batter
150g icing sugar (approx. 1 1/4 cups)*
80g butter (approx. 3/4 a stick)*
85g cream cheese (approx. 1/3 cup)*
100g marshmallow fluff (approx. 1/2 cup)*
Make your cake batter as normal, then pop it into the fridge for half an hour or so, until
it gets super thick. Then make little mounds of cake batter on baking trays, and pop
them all in the oven for ten to fifteen minutes.
When the cakes are all cooked, leave them on a wire rack to cool, while you make the
filling. Mix 150g icing sugar, 80g butter, 85g cream cheese, and 100g marshmallow fluff
all together in a bowl. Perfect. I like to pop it in the fridge for 15 minutes or so, to let it
firm up a bit.

These look sooo delicious! I'm thinking of making these with a spice cake batter. I also loved looking through the Hummingbird Bakery's website. They have a really neat iPhone app full of their recipes that I'm really tempted to download.
